Undeclared allergens account for almost 50% of the food recalls internationally on an annual basis. Inadvertent allergen cross contact with other foods through inadequately cleaned equipment is an issue that can present a risk to allergic consumers. Jennifer will share how allergen removal through cleaning of shared equipment or processing lines is a critical point for effective allergen control. The key to ensuring adequate removal is the validation and verification of the efficacy of the allergen methods used
