Food often travels thousands of miles before reaching its final destination and retailers depend on modified atmosphere packaging (MAP) to extend the freshness and shelf-life of their products. Managing the headspace gas, or the air around the product within the sealed package, is critical to maintaining the quality of MAP goods. Measuring the gas within the package, and making sure that the oxygen levels do not exceed specified limits which can lead to bacterial growth, helps control the quality of packaged food products.
