Environmental Monitoring Programs (EMP’s) can be an extremely useful tool to identify and minimize the potential for microbial contamination in a food processing environment. Every EMP is product and process specific and requires careful development and implementation to ensure maximum effectiveness.

In the Food Safety Modernization Act (FSMA), EMP’s are specifically referenced as a key element in developing an effective Food Safety Plan. Although we are all waiting for the related FSMA Rules to be released, industry sectors across the supply chain are searching for support and information on how to meet the increasing regulatory requirements.

As part of a series developed to address the needs of specific product sectors, this workshop will review the potential microbial risks in food processing for produce packing and processing. Appropriate risk management tools for produce will be identified, including data management techniques and the effective development and implementation of sampling and testing strategies that affect your industry. Working in breakout groups, attendees will be given the opportunity to develop and present an actual EMP based on the materials covered.
